This brew began life as a classic French Saison, fermented in stainless. The fresh beer was then transferred into Willamette Valley white wine barrels that housed Brettanomyces and Lactobacillus. After a lengthy rest in those barrels, the now sour beer was racked into Badland’s Distilling Cucumber gin barrels and finished on hibiscus, juniper, and grapefruit zest. The finished beer is light and bright, spritzy and tart, and displays cocktail inspired notes of botanical gardens, farmer’s market, and citrus orchard.
